Gingerbread Latte Cookies (Print Version)

# Ingredients:

01 - 2 cups old-fashioned oats (170g).
02 - 1 2/3 cups flour (210g).
03 - 2 tsp espresso powder.
04 - 1 tsp baking soda.
05 - 1/4 tsp salt.
06 - 1 tsp ground ginger.
07 - 1 tsp ground cinnamon.
08 - 1/4 tsp ground nutmeg.
09 - 1/8 tsp ground cloves.
10 - 3/4 cup soft butter (170g).
11 - 1 cup brown sugar (200g).
12 - 1/4 cup white sugar (50g).
13 - 1 large egg, room temp.
14 - 1/4 cup molasses (75g).
15 - 8 oz white chocolate (226g).
16 - 1 tsp oil for chocolate.
17 - Extra spices for topping.

# Instructions:

01 - Pulse oats in food processor until roughly chopped with some flour-like texture.
02 - Combine processed oats, flour, coffee powder, baking soda, salt and all spices.
03 - Beat butter with both sugars until fluffy. Mix in egg and molasses until smooth.
04 - Mix dry ingredients into wet mixture. Chill dough 30-45 minutes.
05 - Scoop 1.5 tbsp dough balls onto lined sheets. Bake at 350°F for 12-13 minutes.
06 - Melt white chocolate with oil and espresso powder. Dip cooled cookies halfway, sprinkle with spices.

# Notes:

01 - Pulsing oats creates perfect chewy texture.
02 - Use real white chocolate bars, not chips.
03 - Can skip coffee flavor if preferred.
