Garlic Roasted Potatoes (Print Version)

# Ingredients:

→ Roasting

01 - 2 pounds baby red potatoes (or chopped medium red potatoes)
02 - 2 tablespoons olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon kosher salt
05 - Fresh ground black pepper
06 - 1/3 cup shredded Parmesan cheese (optional)

→ Garlic Butter

07 - 1 1/2 Tbsp salted butter (or vegan butter, for vegan)
08 - 1 large or 2 small garlic cloves, finely minced (2 teaspoons minced)
09 - 1 Tbsp finely chopped fresh parsley

# Instructions:

01 - Preheat the oven to 425°F.
02 - Wash and cut potatoes into halves (baby potatoes) or 1/2-inch cubes (medium potatoes).
03 - Mix potatoes with olive oil, garlic powder, salt, and black pepper in a large bowl.
04 - Spread on parchment-lined baking sheets cut side down. Roast 20 minutes, add Parmesan, then roast 10-15 minutes more until browned.
05 - Melt butter with minced garlic and parsley in a small saucepan.
06 - Toss roasted potatoes with garlic butter and additional salt. Serve warm.
