Garlic Parmesan Chicken Meatloaf (Print Version)

# Ingredients:

→ Meatloaf

01 - 1 lb ground chicken
02 - 1/2 cup breadcrumbs (Panko preferred)
03 - 1/3 cup Parmesan cheese, grated
04 - 1/2 cup mozzarella cheese, shredded
05 - 1 egg, lightly beaten
06 - 3 cloves garlic, minced
07 - 1/2 small onion, finely diced
08 - 1 tsp Italian seasoning
09 - Salt and pepper to taste
10 - 2 tbsp fresh parsley, chopped
11 - 1 tbsp olive oil

→ Garlic Parmesan Topping

12 - 1/4 cup Parmesan cheese, grated
13 - 1/4 cup breadcrumbs
14 - 2 tbsp butter, melted
15 - 1 clove garlic, minced

# Instructions:

01 - Preheat oven to 375°F. Grease loaf pan or line baking sheet with parchment.
02 - Combine all meatloaf ingredients gently until just mixed, avoiding overmixing.
03 - Transfer mixture to pan or shape into loaf on baking sheet.
04 - Mix Parmesan, breadcrumbs, melted butter, and garlic. Spread over meatloaf.
05 - Bake 35-40 minutes until internal temperature reaches 165°F and top is golden.
06 - Let rest 5 minutes before slicing. Garnish with parsley if desired.

01 - Can be made in loaf pan or on baking sheet
