Garlic Butter Steak and Potatoes (Print Version)

01 - 1/4 cup ghee or butter, divided
02 - 1 tablespoon olive oil
03 - 1 lb Yukon gold potatoes, cut into 1/2 inch cubes
04 - 3 garlic cloves, minced
05 - 1 teaspoon dried thyme
06 - 1/2 teaspoon dried oregano
07 - 1/2 teaspoon sea salt, plus more to taste
08 - 1/4 teaspoon ground black pepper, plus more to taste
09 - 1 1/4 lb sirloin steak, cut into 1/2 inch cubes

# Instructions:

01 - Heat a large cast iron skillet over medium heat. Add olive oil and 2 tablespoons of ghee to the pan.
02 - Once the ghee is melted, add the potatoes and sprinkle minced garlic, thyme, oregano, salt, and pepper over them. Cook for 2-3 minutes before stirring. Continue cooking until the potatoes are golden brown and fork-tender, about 8-10 minutes. Stir frequently to prevent sticking. Remove potatoes and browned bits from the pan and set aside.
03 - Increase the heat to medium-high. Add the remaining 2 tablespoons of ghee to the pan. Once melted, add the steak pieces and season with a dash of salt and pepper. Cook for at least 2 minutes before stirring to achieve a good sear. Stir and continue cooking for another 1-2 minutes until golden brown.
04 - Add the cooked potatoes back to the pan and stir to combine. Season with additional salt and pepper to taste. Top with freshly chopped parsley. Serve and enjoy.

# Notes:

01 - You can use other small potato varieties, such as yellow, red, or fingerling potatoes.
02 - Cut the potatoes into small, even pieces to ensure even and faster cooking.
03 - Let the steak pieces sear properly before stirring to enhance flavor and texture.
