# Instructions:

01 - Heat oven to 200°C and line a baking sheet with parchment paper or foil.
02 - Slice jalapeños in half lengthwise and remove seeds and membranes to form cavity for filling.
03 - Warm olive oil in a skillet over medium heat. Add chopped shrimp, Cajun seasoning, and minced garlic. Sauté for 2–3 minutes until shrimp is opaque. Remove from heat and allow cooling slightly.
04 - In a mixing bowl, blend cooked shrimp, cream cheese, cheddar, mozzarella, and green onions if using. Season mixture with salt and pepper as needed.
05 - Evenly spoon shrimp and cheese filling into each jalapeño half, pressing gently to fill.
06 - Place stuffed jalapeños on prepared sheet and bake 15–20 minutes until cheese is melted and jalapeños are tender.
07 - Scatter with chopped parsley or green onions and add Parmesan, if desired. Serve immediately while warm.

# Notes:

01 - To increase spiciness, retain some jalapeño seeds when preparing.
02 - Pre-cooked shrimp may be substituted for a quicker preparation.
03 - Leftovers keep refrigerated for up to three days; reheat in oven or air fryer for best texture.
