In a blender or food processor, add in the cottage cheese, greek yogurt, maple syrup and vanilla bean paste. Blend until smooth and creamy.

Add the graham crackers to a baggie and crush with hands until it turns to a fine powder.

Assemble jars with 1.5 tbsp of crushed graham crackers, then 1/4 cup of cheesecake filling and then finish it off with your favorite fruit for a topping.

If making the chocolate version, mix in cacao powder to cheesecake filling until smooth and add in more sweetener if desired. Then assemble like the rest. Finish off with chocolate shavings if desired.
