Easy Chicken Cordon Bleu Recipe (Print Version)

# Ingredients:

01 - 1 cup panko breadcrumbs (or 1/2 cup for super easy method).
02 - 2 small chicken breasts (6-7oz/180-210g each).
03 - 4 slices Swiss cheese.
04 - 4-6 slices ham (2.5oz/75g).
05 - 3 tablespoons mayonnaise (for super easy method).
06 - 1 1/2 tablespoons Dijon mustard (for super easy method).
07 - 1 egg (for dredge method).
08 - 2 teaspoons flour (for dredge method).
09 - 1 1/2 tablespoons butter (for sauce).
10 - 1 1/2 tablespoons flour (for sauce).
11 - 1 1/4 cups milk.
12 - 2 tablespoons Dijon mustard (for sauce).
13 - 3 tablespoons grated parmesan.

# Instructions:

01 - Heat oven to 390F. Spread panko on tray, spray with oil, bake 3 minutes until golden.
02 - Cut pocket in each breast. Fill with folded cheese and ham. Close with toothpicks.
03 - Mix mayo and mustard, spread on top and sides of chicken. Press breadcrumbs on top and sides.
04 - Mix egg and flour. Dip chicken in egg mix, then coat in breadcrumbs.
05 - Spray breaded chicken with oil. Bake 25-30 minutes until golden and cooked.
06 - Make roux with butter and flour. Gradually whisk in milk, mustard and cheese until thickened.

01 - Two breading methods available - super easy or dredge.
02 - Can make ahead using dredge method.
03 - Swiss cheese works best for minimal leakage.
