Easy Cheese Potato Bread (Print Version)

01 - 3 cups all-purpose flour
02 - 1 tablespoon baking powder
03 - 1/2 teaspoon baking soda
04 - 1 teaspoon kosher salt
05 - 1 1/4 cups cheddar cheese shredded, divided
06 - 2 cups milk
07 - 3/4 cups mashed potatoes
08 - 1/2 cup sour cream
09 - 1 egg
10 - 1/4 cup chopped chives
11 - 2 tablespoons melted butter
12 - nonstick cooking spray

# Instructions:

01 - Preheat oven to 375°F and spray a loaf pan with cooking spray.
02 - Combine flour, baking powder, baking soda, salt, and 1 cup of shredded cheddar in a large bowl.
03 - In a separate bowl, combine milk, sour cream, mashed potatoes, egg, and melted butter.
04 - Mix wet and dry ingredients until just combined. Transfer to loaf pan and bake for 60-65 minutes, adding remaining cheese on top for last 10 minutes.
05 - Cool for 20 minutes before removing from pan and slicing.
