Easy Bubble Squeak Breakfast (Print Version)

# Ingredients:

→ For Frying

01 - 2 tablespoons butter
02 - 2 tablespoons olive oil

→ Main Mix

03 - 2 cups cold mashed potatoes from last night
04 - 1 cup leftover cooked veggies, roughly chopped
05 - 1/2 cup onion, finely chopped
06 - A good pinch of salt
07 - Fresh ground black pepper to taste

# Instructions:

01 - Grab a big bowl and mix together your cold mashed potatoes, chopped leftover veggies, and diced onion until well combined.
02 - Put your pan over medium heat and add the butter and oil. Let them melt together and get nice and hot.
03 - Tip your potato mixture into the hot pan and spread it out evenly. Press it down a bit with your spatula.
04 - Let it cook without touching it for about 10-15 minutes until you've got a lovely golden crust on the bottom.
05 - Carefully flip it over (in sections if needed) and cook another 5-10 minutes until you've got that same golden crust on the other side. Give it a taste and add more salt if needed.
