Festive Easter Whoopie Pies (Print Version)

# Ingredients:

→ Cookie Layers

01 - 13.25 oz box of white cake mix
02 - 1/2 cup vegetable oil
03 - 2 eggs
04 - Easter sprinkles

→ Filling

05 - 1 cup vanilla frosting
06 - 2 drops red food coloring

# Instructions:

01 - Preheat the oven to 350 degrees.
02 - Line a baking sheet with parchment paper.
03 - Beat the cake mix, oil, and eggs in a medium bowl, or bowl of a stand mixer, until a dough forms.
04 - Use a cookie scoop to gather dough, then drop onto a baking sheet.
05 - Top with sprinkles, and flatten slightly to push them into the dough.
06 - Transfer the baking sheet to the oven and bake for 10 minutes, remove and allow to cool for a few minutes, then transfer to a wire rack to cool completely.
07 - Add frosting to the bowl, then stir in the food coloring until a solid pink color has formed.
08 - Add the frosting to a piping bag and snip off the tip.
09 - Pipe frosting into the center of 12 of the cookies, then top with another cookie, and gently push them together slightly.

# Notes:

01 - Allow cookies to cool completely before assembling to prevent the frosting from melting.
02 - You can use any color of food coloring to match your Easter theme.
03 - Store assembled whoopie pies in an airtight container for up to 3 days.
