Peel and chop potatoes. Boil in salted water 15-20 minutes until tender.

Heat oven to 425°F. Line baking sheet with parchment.

Melt butter and warm cream separately, set aside.

Drain potatoes, return to heat briefly. Rice or mash until smooth.

Add butter, cream, cheese, seasonings and egg yolks. Mix until smooth.

Pipe swirls onto baking sheet. Brush with butter and bake 15-20 minutes until golden.
