Deconstructed Shepherd’s Pie Dish (Print Version)

01 - 2 tablespoons oil or butter
02 - 1 pound ground lamb or beef
03 - 1 cup onion, diced
04 - 1 cup carrot, diced
05 - 2 cloves garlic, chopped
06 - 2 tablespoons tomato paste
07 - 2 tablespoons all-purpose flour (gluten-free if needed)
08 - 1 cup beef broth
09 - 1 tablespoon Worcestershire sauce (gluten-free if needed)
10 - 1 teaspoon rosemary, chopped or 1/2 teaspoon dried
11 - 1 teaspoon thyme, chopped or 1/2 teaspoon dried
12 - 2 bay leaves (optional)
13 - 1 cup peas
14 - Salt and pepper to taste
15 - 4 cups hot mashed potatoes

# Instructions:

01 - Heat oil or butter in a pan over medium-high heat. Add ground meat and cook, breaking it apart as it cooks, until fully browned, about 7-10 minutes. Drain all but 2 tablespoons of grease and set aside.
02 - Add diced onion and carrots to the pan and cook until tender, approximately 5-7 minutes.
03 - Stir in chopped garlic and tomato paste. Mix thoroughly before sprinkling flour into the pan. Stir again and cook for 1 minute.
04 - Pour in beef broth, and return the cooked meat to the pan. Add Worcestershire sauce, rosemary, thyme, and bay leaves. Simmer until the sauce thickens, about 5-7 minutes.
05 - Remove bay leaves and stir in peas. Season with salt and pepper to taste, then serve over hot mashed potatoes.

# Notes:

01 - Optional additions include diced celery, mushrooms, or corn. Try soy sauce or fish sauce as a flavor enhancer before seasoning with salt.
