Croque Madame Savory Waffles (Print Version)

# Ingredients:

→ Bechamel Sauce

01 - 4 tablespoons butter
02 - 4 tablespoons all-purpose flour
03 - 2 cups whole milk
04 - 2 tablespoons Dijon mustard

→ Waffles

05 - 2 cups all-purpose flour
06 - 3 teaspoons baking powder
07 - 1/4 teaspoon salt
08 - 2 eggs, lightly beaten
09 - 1 3/4 cups whole milk
10 - 1/4 cup butter, melted
11 - 1 cup shaved ham, diced
12 - 1 cup Gruyere cheese, shredded
13 - 18–24 slices shaved ham
14 - 1 cup Gruyere cheese, shredded
15 - 6 eggs, poached or fried to desired doneness
16 - Salt and pepper to taste
17 - Chives for serving, optional

# Instructions:

01 - In a small saucepan or skillet, melt butter over medium-low heat. Whisk in flour and cook for 2 minutes, stirring frequently. Gradually whisk in milk until smooth, then continue to stir until thick enough to coat the back of a spoon. Remove from heat, stir in Dijon mustard, and season with salt and pepper to taste.
02 - In a large bowl, stir together the flour, baking powder, and salt. Mix in the eggs, milk, and melted butter until just combined. Fold in the diced ham and shredded Gruyere cheese.
03 - Preheat the waffle maker. Grease the surface, and pour about 3/4 cup of batter onto it. Close and cook until golden brown. Repeat with remaining batter.
04 - Preheat the broiler. Place waffles on a parchment or silicone mat-lined baking tray. Top each waffle with 1/6 of the bechamel sauce, add 3–4 slices of shaved ham, and sprinkle with shredded Gruyere cheese. Broil until the cheese is melted and the bechamel is hot and bubbly.
05 - Move the assembled waffles to a serving plate. Top each with a poached or fried egg and garnish with chopped chives, if desired.

# Notes:

01 - Gouda, white cheddar, Emmental, or Swiss cheese can be used as alternatives to Gruyere cheese.
