Crock Pot Bourbon Chicken (Print Version)

# Ingredients:

01 - 3 pounds boneless, skinless chicken thighs
02 - 1 cup light brown sugar
03 - 1 cup soy sauce
04 - 1/3 cup bourbon whisky
05 - 2 tablespoons apple cider vinegar
06 - 1/2 teaspoon ground ginger
07 - 1 tablespoon honey
08 - 1/2 teaspoon red pepper flakes
09 - 4 cloves garlic

→ For Thickening

10 - 3 tablespoons cornstarch
11 - 2 tablespoons water

→ For Garnish

12 - 1/4 cup green onions, chopped

# Instructions:

01 - Place the well-trimmed chicken thighs into the slow cooker.
02 - In a medium mixing bowl, whisk together brown sugar, soy sauce, bourbon, apple cider vinegar, ginger, honey, red pepper flakes, and garlic.
03 - Pour the sauce mixture over the chicken thighs in the slow cooker.
04 - Cover and cook on high for 4 hours, or low for 6 hours.
05 - Remove the chicken thighs to a plate and roughly chop them.
06 - Mix cornstarch and water until dissolved, then whisk into the sauce in the crock pot.
07 - Return chopped chicken to the sauce, stir to combine, cover and let bubble. Then turn off the crock pot.
08 - Sprinkle with chopped green onions and serve over rice.

# Notes:

01 - You can sprinkle with toasted sesame seeds for garnish if desired.
02 - Apple juice can be used instead of bourbon to make it alcohol-free.
03 - Chicken breast cut into 1-inch cubes can be used instead of thighs.
04 - Adding ketchup can boost the flavors.
