Place the well-trimmed chicken thighs into the slow cooker.

In a medium mixing bowl, whisk together brown sugar, soy sauce, bourbon, apple cider vinegar, ginger, honey, red pepper flakes, and garlic.

Pour the sauce mixture over the chicken thighs in the slow cooker.

Cover and cook on high for 4 hours, or low for 6 hours.

Remove the chicken thighs to a plate and roughly chop them.

Mix cornstarch and water until dissolved, then whisk into the sauce in the crock pot.

Return chopped chicken to the sauce, stir to combine, cover and let bubble. Then turn off the crock pot.

Sprinkle with chopped green onions and serve over rice.
