Crispy Vegan Taquitos (Print Version)

# Ingredients:

→ Filling

01 - 1 cup black beans, cooked
02 - 1 cup sweet potatoes, cooked and mashed
03 - 1/2 cup corn kernels
04 - 1/2 cup onion, finely chopped
05 - 2 cloves garlic, minced
06 - 1 teaspoon chili powder
07 - 1 teaspoon cumin
08 - 1/2 teaspoon smoked paprika
09 - Salt and pepper to taste

→ Assembly

10 - 10 small corn tortillas
11 - 2 tablespoons olive oil

→ Optional Toppings

12 - Guacamole
13 - Salsa
14 - Vegan sour cream
15 - Fresh cilantro

# Instructions:

01 - Preheat oven to 400°F (200°C).
02 - Mix beans, sweet potatoes, corn, onion, garlic, and seasonings until well combined.
03 - Heat tortillas until pliable to prevent cracking when rolling.
04 - Place 2 tablespoons filling on each tortilla and roll tightly.
05 - Place seam-side down on lined baking sheet, brush with oil. Bake 20-25 minutes until crispy.
06 - Let cool briefly, serve with optional toppings.
