Smashed Potatoes (Print Version)

# Ingredients:

01 - 2 lbs small yellow potatoes.
02 - 2 tsp sea salt.
03 - 2 tbsp olive oil, plus more.
04 - 1 1/2 tsp garlic powder.
05 - 3/4 tsp onion powder.
06 - Black pepper.
07 - 1 tbsp fresh herbs.
08 - Flaky salt (optional).
09 - Parmesan (optional).

# Instructions:

01 - Heat oven to 425°F. Oil 2 baking sheets well.
02 - Cook potatoes with 1 tsp salt until fork tender, 15-20 minutes.
03 - Place on baking sheets, smash to 1/4 inch with measuring cup. Add oil and seasonings.
04 - Bake 25-35 minutes until golden and crisp, rotating pans halfway.
05 - Top with herbs, more salt, and Parmesan if desired.

# Notes:

01 - Best served hot and crispy.
02 - Oil pans well to prevent sticking.
03 - Rotate pans for even browning.
