Heat oven to 425°F. Oil 2 baking sheets well.

Cook potatoes with 1 tsp salt until fork tender, 15-20 minutes.

Place on baking sheets, smash to 1/4 inch with measuring cup. Add oil and seasonings.

Bake 25-35 minutes until golden and crisp, rotating pans halfway.

Top with herbs, more salt, and Parmesan if desired.
