Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

If your cottage cheese is watery, strain it through a fine-mesh sieve or cheesecloth to remove excess liquid. In a mixing bowl, combine the cottage cheese, Parmesan, garlic powder, onion powder, salt, and pepper. Stir until evenly mixed.

Spoon small dollops (about 1 tablespoon each) of the mixture onto the prepared baking sheet, spacing them about 2 inches apart. Use the back of the spoon to gently flatten each dollop into a thin circle, about 2-3 inches wide.

Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and crispy. For extra crispiness, flip the chips halfway through baking and continue cooking until fully crisp.

Remove from oven and allow to cool for 5 minutes. They will crisp up further as they cool. Enjoy immediately or store in an airtight container.
