Crispy Black Bean Tacos (Print Version)

# Ingredients:

→ Black Bean Filling

01 - 19 oz can black beans (2-3 cups)
02 - 1/2 cup salsa
03 - 1 tablespoon taco seasoning
04 - 1 tablespoon chipotle pepper in adobo sauce
05 - 1/2 teaspoon garlic powder
06 - 1/2 - 1 teaspoon salt
07 - 1 tablespoon olive oil
08 - Cilantro or parsley, chopped
09 - Green onions, sliced (optional)

→ Optional Toppings

10 - Dairy-free cheese
11 - Diced tomatoes or pico de gallo
12 - Avocado slices or guacamole
13 - Non-dairy sour cream
14 - Pickled red onions
15 - Creamy coleslaw
16 - Romaine lettuce ribbons

# Instructions:

01 - Preheat oven to 450°F. Drain and rinse black beans.
02 - Blend beans, salsa, seasonings in food processor until slightly chunky. Stir in cilantro.
03 - Cook green onions in oil, add bean mixture and sear for 5 minutes to develop crust.
04 - Fill tortillas with bean mixture and optional cheese. Fold over.
05 - Brush tacos with oil and bake 6-8 minutes per side until crispy.
06 - Add toppings and serve immediately with dipping sauces.
