Crispy Bang Bang Salmon Bites (Print Version)

# Ingredients:

→ Salmon Bites

01 - 450 g salmon fillet, cut into bite-sized cubes
02 - 1 g salt, or to taste
03 - 0.5 g freshly ground black pepper, or to taste

→ Coating

04 - 60 g cornstarch
05 - 2 large eggs, beaten
06 - 60 g panko breadcrumbs

→ Bang Bang Sauce

07 - 120 g mayonnaise
08 - 30 ml sweet chili sauce
09 - 15 ml sriracha, adjust to taste
10 - 5 ml honey

# Instructions:

01 - Preheat oven to 200°C. Alternatively, heat oil in a deep pan for frying.
02 - Pat dry salmon cubes and season evenly with salt and pepper.
03 - Coat each salmon cube in cornstarch, dip into beaten eggs, then roll in panko breadcrumbs to ensure even coverage.
04 - Arrange breaded salmon cubes on a baking tray lined with parchment. Bake for 12 to 15 minutes or until golden and crispy, or fry in hot oil until uniformly crisp.
05 - In a bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey until smooth.
06 - Toss hot, crispy salmon bites in bang bang sauce until thoroughly coated. Serve immediately.

# Notes:

01 - Increase or decrease sriracha for preferred spice level.
02 - Ensure oil is sufficiently hot before frying to achieve maximum crispiness and minimize oil absorption.
03 - Serve with steamed vegetables or over rice for a complete meal.
