Creamy Tuscan Chicken Recipe (Print Version)

# Ingredients:

01 - 4 chicken breasts (6 ounces each).
02 - 1 teaspoon Italian seasoning.
03 - 1 teaspoon kosher salt.
04 - 1/2 teaspoon black pepper.
05 - 3 tablespoons extra virgin olive oil.
06 - 4 garlic cloves, minced.
07 - 1/4 cup finely chopped yellow onion.
08 - 1/2 cup sun-dried tomatoes, sliced.
09 - 2 cups baby spinach.
10 - 1 1/2 cups heavy cream.
11 - 1/4 cup freshly grated parmesan.

# Instructions:

01 - Season chicken breasts on both sides with Italian seasoning, salt and pepper.
02 - Heat 2 tablespoons oil in skillet over medium heat. Sear chicken 3-4 minutes per side until golden. Remove to plate.
03 - Add 1 tablespoon oil and cook onions until soft. Add garlic and tomatoes, cook 1 minute. Add spinach until wilted.
04 - Add cream and parmesan, stir and bring to simmer.
05 - Return chicken to pan and cook about 5 minutes until heated through.

01 - Can be made dairy-free with substitutes.
02 - Pound thick chicken breasts for even cooking.
03 - Use jarred sun-dried tomatoes.
