Boursin Chicken (Print Version)

# Ingredients:

01 - 4 boneless skinless chicken breasts (1.5 lbs).
02 - 2 tablespoons olive oil or butter.
03 - 1/2 cup chicken broth.
04 - 1/2 cup heavy cream.
05 - 1 package (5.2 oz) Boursin Cheese with Garlic and Fine Herbs.
06 - 1/2 teaspoon salt.
07 - 1/4 teaspoon black pepper.
08 - 1/2 teaspoon smoked paprika (optional).
09 - 1 tablespoon fresh parsley, chopped.

# Instructions:

01 - Sprinkle chicken breasts with salt, pepper and smoked paprika.
02 - Heat oil in large skillet. Brown chicken 4-5 minutes each side until golden.
03 - Remove chicken. Add broth to pan, scrape bottom. Stir in cream and Boursin until smooth.
04 - Return chicken to pan. Simmer 8-10 minutes until fully cooked.
05 - Top with fresh parsley and serve over pasta or rice.

# Notes:

01 - Can add spinach or mushrooms to sauce.
02 - Works well with chicken thighs too.
03 - Keeps in fridge up to 3 days.
