Cowboy Queso (Print Version)

# Ingredients:

01 - 1/2 pound hot or regular pork sausage
02 - 3/4 cup Pale Ale beer
03 - 16 ounces Velveeta, cubed
04 - 1/2 cup pepper jack cheese, shredded
05 - 1 (14.5-ounce) can Rotel tomatoes, undrained
06 - 1 cup black beans, drained and rinsed
07 - 1/4 cup fresh cilantro, chopped
08 - Kosher salt and black pepper to taste

# Instructions:

01 - Brown sausage in skillet over medium heat, breaking into crumbles. Season with salt and pepper.
02 - Pour in beer and simmer 3-4 minutes to reduce slightly.
03 - Add Velveeta and pepper jack, stir until completely melted, about 3-5 minutes.
04 - Stir in tomatoes, black beans, and cilantro until combined. Serve immediately.
