Cowboy Caviar Recipe (Print Version)

# Ingredients:

01 - 2 cans (14 oz each) black-eyed peas, drained.
02 - 1 can (14 oz) black beans, drained.
03 - 1 1/2 cups corn kernels.
04 - 1 1/2 cups chopped tomatoes.
05 - 1 bell pepper, chopped.
06 - 3/4 cup chopped red onion.
07 - 1/2 cup chopped cilantro.
08 - 1-2 jalapeƱos, chopped.
09 - 1 avocado (optional).
10 - 1/3 cup olive oil.
11 - 3 tablespoons red wine vinegar.
12 - 2 garlic cloves, minced.
13 - 1-1 1/2 teaspoons salt.
14 - 1 teaspoon dried oregano.
15 - 1/2 teaspoon dried basil.
16 - 1 teaspoon maple syrup or honey.
17 - 1/8 teaspoon red pepper flakes.

# Instructions:

01 - Mix beans, corn, tomatoes, pepper, onion, cilantro and jalapeƱo in large bowl.
02 - Whisk oil, vinegar, garlic, herbs, sweetener and seasonings until blended.
03 - Pour dressing over vegetables, toss well. Let marinate 20 minutes.
04 - Add avocado just before serving if using. Adjust seasonings to taste.

01 - Can be made ahead.
02 - Keeps 4 days refrigerated.
03 - Add avocado last minute.
