Cottage Cheese Queso (Print Version)

# Ingredients:

01 - 1 cup cottage cheese
02 - 1/2 cup cheddar cheese, shredded
03 - 1/2 teaspoon taco seasoning

→ Optional Garnishes

04 - Pico de gallo
05 - Salsa
06 - Fresh cilantro
07 - Tortilla chips, for serving

# Instructions:

01 - Add cottage cheese to a blender (single serve works great) and blend until smooth.
02 - Transfer the blended cottage cheese to a microwave safe bowl. Top with the shredded cheese and taco seasoning.
03 - Transfer to the microwave and microwave for 1 minute.
04 - Stir well and transfer back to the microwave. Cook for another 30 seconds before stirring well again. Repeat the process of cooking for 30 seconds and stirring until the queso is smooth. The whole process should take about 2 minutes but depends on your microwave.
05 - Optionally garnish with pico de gallo, salsa, or cilantro. Serve with tortilla chips.

# Notes:

01 - The smoother the cottage cheese is blended the smoother the queso will be.
02 - While testing I once tried using an immersion blender which didn't give the same smoothness of a classic blender and the queso didn't turn out as smooth.
03 - If you have a single serve blender, that will work best.
04 - This queso can be stored in an airtight container in the refrigerator for 3-4 days and reheated in the microwave.
05 - For a spicier queso, add a dash of hot sauce or extra taco seasoning.
