Cottage Cheese Protein Brownies (Print Version)

01 - 1 cup cottage cheese
02 - 1/2 cup protein powder, preferred flavor
03 - 4 large eggs, room temperature
04 - 2/3 cup unsweetened cocoa powder
05 - 1/4 cup coconut oil, melted
06 - 1/2 cup coconut flour
07 - 3/4 cup sweetener of choice
08 - 1 tsp vanilla extract
09 - 1 tsp baking powder
10 - 1/4 cup chocolate chips or chopped dark chocolate

# Instructions:

01 - Preheat the oven to 350°F (180°C). Line a 9×9 inch square baking pan with parchment paper or grease it well. Set aside.
02 - Add the cottage cheese to a blender or food processor and process until smooth. Scrape down the sides as needed to ensure all the cottage cheese is creamy and smooth.
03 - To the blended cottage cheese, add the eggs, melted coconut oil, and vanilla extract. Blend or process until well combined.
04 - Add the protein powder, unsweetened cocoa powder, coconut flour, sweetener, and baking powder to the blender or food processor with the wet ingredients. Blend until a smooth batter forms, scraping down the sides if necessary.
05 - Pour the batter into the prepared baking pan, spreading it out evenly with a spatula.
06 - Sprinkle the chocolate chips or chopped dark chocolate evenly over the top of the batter.
07 - Bake in the preheated oven for 20-22 minutes, or until the top looks set and is firm to the touch. A toothpick inserted into the center should come out with a few moist crumbs, but not wet batter.
08 - Allow the brownies to cool completely in the pan before cutting into squares. Enjoy!
