# Ingredients:

01 - 6 large eggs
02 - 2 cups cottage cheese
03 - 1 cup shredded cheese
04 - 1 cup chopped spinach
05 - 1/2 cup diced bell pepper
06 - 1/2 cup chopped onion
07 - 1/2 teaspoon garlic powder
08 - 1/2 teaspoon onion powder
09 - 1/2 teaspoon salt
10 - 1/4 teaspoon black pepper
11 - Fresh herbs for garnish (optional)
12 - Sliced tomatoes or avocado for garnish (optional)

# Instructions:

01 - Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking dish.
02 - In a large bowl, whisk the eggs. Stir in the cottage cheese until fully incorporated.
03 - Add the chopped spinach, diced bell pepper, chopped onion, garlic powder, onion powder, salt, and black pepper. Mix until combined.
04 - Fold in the shredded cheese, reserving a small amount for topping, if desired. Pour the mixture into the prepared baking dish and top with the reserved cheese.
05 - Bake in the oven for 40 to 45 minutes, or until the egg bake is set and golden brown on top. Let it cool for 5 minutes before slicing.
