# Ingredients:

01 - 1/4 cup softened butter
02 - 1/3 cup brown sugar
03 - 1 large egg
04 - 1/2 cup 2% cottage cheese
05 - 1 teaspoon pure vanilla extract
06 - 1 1/4 cups almond flour
07 - 1 teaspoon baking powder
08 - 1/2 cup chocolate chips

# Instructions:

01 - Line a baking sheet with parchment paper.
02 - In a medium mixing bowl, cream together butter and brown sugar until smooth.
03 - Mix in the egg and vanilla extract until well combined.
04 - Use a hand blender or food processor to blend the cottage cheese until smooth.
05 - Add the blended cottage cheese to the butter mixture and mix until incorporated.
06 - Add almond flour and baking powder to the wet ingredients and mix until a soft dough forms.
07 - Gently fold the chocolate chips into the dough.
08 - Preheat the oven to 350°F (175°C).
09 - Use a cookie scoop to drop balls of dough onto the prepared baking sheet.
