Cottage Cheese Chicken Salad (Print Version)

# Ingredients:

→ Chicken Salad Base

01 - 1 cup rotisserie chicken, chopped into small chunks
02 - ½ cup low-fat (2% milkfat) cottage cheese, blended smooth
03 - ¼ cup jarred banana peppers (mild or spicy), diced
04 - ¼ cup red onion, diced
05 - ¼ cup celery, diced
06 - 2 tablespoons green onion, thinly sliced

→ Seasonings

07 - ½ teaspoon Dijon or spicy mustard
08 - ½ teaspoon garlic powder
09 - ¼ teaspoon salt and pepper

# Instructions:

01 - In a food processor, pulse cottage cheese, mustard, garlic powder, salt, and pepper until smooth.
02 - In a large mixing bowl, combine the blended cottage cheese mixture, chopped chicken, banana peppers, red onion, celery, and green onion. Stir until well combined.
03 - Taste the salad and adjust seasonings such as salt and pepper if needed. Serve immediately or refrigerate until ready to serve.
