01 - 2 cups cooked sweet potato
02 - 2 cups almond flour
03 - 2 teaspoons cinnamon

# Instructions:

01 - Boil two medium sweet potatoes for about 30 minutes with the skin on. Drain the water and allow them to cool until they can be handled safely, about 45 minutes to one hour.
02 - Preheat the oven to 350 degrees F and line a baking pan with parchment paper.
03 - Combine cooked sweet potato (with or without skin), almond flour, and cinnamon in a large mixing bowl. Use a handheld electric mixer and blend on low for chunky texture or high for a more whipped texture.
04 - Separate the sweet potato cookie dough into 12 equal portions. Roll each portion into balls with the palms of your hands and place on the prepared baking sheet.
05 - Flatten each ball with a fork or the palms of your hands. Bake for 12-15 minutes.

01 - The sweet potato skin is packed with antioxidants like vitamin A and adds texture, but you can remove it if preferred.
