01 - 2 cans (425 g each) chickpeas (garbanzo beans), drained and rinsed
02 - 2 tablespoons olive oil
03 - 4 tablespoons brown sugar or dark brown sugar
04 - 2 tablespoons ground cinnamon
05 - 0.25 teaspoon salt (optional)

# Instructions:

01 - Preheat oven to 200°C. Line a standard baking tray with parchment paper or a silicone baking mat.
02 - Drain and rinse chickpeas thoroughly. Remove skins for optimal crispiness. Pat chickpeas dry with paper towels, removing as much moisture as possible.
03 - Spread chickpeas in a single layer on the prepared tray and bake for 15 minutes.
04 - In a small bowl, combine brown sugar, ground cinnamon, and salt.
05 - Remove chickpeas from oven. Drizzle with olive oil and stir or shake tray to coat evenly. Sprinkle cinnamon sugar mixture over chickpeas and roll or stir again for even coating.
06 - Return chickpeas to oven and bake for an additional 15 minutes.
07 - Turn off oven after baking and leave chickpeas inside with the oven door slightly open using a wooden spoon handle. Let them cool completely.
08 - Transfer cooled chickpeas to an airtight container. Store at room temperature and consume within a few days for best crunch.

01 - For even crispier chickpeas, ensure they are thoroughly dried and do not overcrowd the baking tray.
02 - Double the batch by using a second tray; avoid overlapping chickpeas for uniform roasting.
03 - Chickpeas lose crunch over time; freshly roasted is best.
