Cinnamon Crunch Cheesecake Bites (Print Version)

# Ingredients:

01 - 16 ounces cream cheese, room temperature.
02 - 1/2 teaspoon vanilla extract.
03 - 1/2 cup granulated sugar.
04 - 1/2 cup heavy cream.
05 - 4 cups cinnamon crunch cereal.
06 - 1 cup all-purpose flour.
07 - 4 large eggs, beaten.
08 - 4 cups canola oil, for frying.
09 - Powdered sugar for serving.

# Instructions:

01 - Beat cream cheese with vanilla until smooth. Add sugar and beat, then mix in heavy cream until thick.
02 - Freeze mixture for 45 minutes.
03 - Scoop into balls and place on lined baking sheet. Freeze 2 hours.
04 - Process cereal into fine crumbs. Set up coating stations with flour, eggs, and crumbs.
05 - Coat each ball in flour, egg, crumbs, then egg and crumbs again. Return to freezer 15 minutes.
06 - Heat oil to 350°F. Fry 4 bites at a time until golden, about 1 minute.
07 - Drain on rack, dust with powdered sugar and serve warm.

01 - Double coating creates better crust.
02 - Keep frozen until ready to fry.
03 - Best served immediately.
