Set oven temperature to 95°C (200°F) and allow to preheat fully.

Add cored and thinly sliced apples to a large bowl. Sprinkle with ground cinnamon and granulated sugar. Gently toss until the slices are evenly coated.

Spray a baking sheet lightly with cooking spray or line with parchment paper. Lay apple slices flat in a single layer without overlapping. Use a second tray as needed.

Bake in the preheated oven for 2 to 3 hours until the apple chips are dry but still slightly tender. Rotate trays if using multiple sheets for even dehydration.

Allow apple chips to cool completely on the tray. Once cooled, transfer to an airtight container; store up to 4 days.
