Homemade Chipotle BBQ Chicken Pizza (Print Version)

# Ingredients:

→ Pizza Dough

01 - 310 g all-purpose flour, sifted
02 - 0.5 teaspoon salt
03 - 2.25 teaspoons active dry yeast
04 - 1 teaspoon granulated white sugar
05 - 240 ml warm water (40-46°C)
06 - 3 tablespoons olive oil, divided

→ Chipotle Chicken

07 - 2 medium chicken breasts, halved and pounded thin
08 - 1 teaspoon chipotle seasoning
09 - 1 teaspoon garlic powder
10 - 1 teaspoon Italian herb blend
11 - 0.5 teaspoon salt, adjust to taste
12 - 0.25 teaspoon black pepper
13 - 2 tablespoons butter

→ Pizza Toppings

14 - 360 ml BBQ sauce
15 - 250 g mozzarella cheese, shredded
16 - Prepared chipotle chicken, shredded
17 - 60 g bacon, crumbled
18 - 0.25 medium red onion, chopped
19 - 150 g cherry tomatoes, halved
20 - 15 g fresh parsley or cilantro, finely chopped

→ Chipotle Drizzle

21 - 120 ml mayonnaise
22 - 1 garlic clove, minced
23 - 1 teaspoon fresh lime juice
24 - 0.5 teaspoon chipotle seasoning
25 - 0.25 teaspoon salt
26 - 0.25 teaspoon black pepper

# Instructions:

01 - In a large mixing bowl or stand mixer, combine sifted flour, salt, and yeast. Whisk gently. In a small bowl, dissolve sugar in warm water. Gradually incorporate sugar water into the flour mixture while mixing on medium-low speed. Add 2 tablespoons olive oil and continue mixing until a tacky dough ball forms.
02 - Transfer dough onto a lightly floured surface and knead until smooth and elastic, about 5–7 minutes. Place in a greased bowl, drizzle with 1 tablespoon olive oil to coat, cover, and let rise in a warm area until doubled in size, approximately 1 hour.
03 - Season chicken breasts on both sides with chipotle seasoning, garlic powder, Italian herb blend, salt, and pepper. In a skillet over medium-high heat, melt butter and cook chicken until golden and cooked through, turning once. Transfer to a board and shred while warm using two forks.
04 - In a bowl, thoroughly combine mayonnaise, minced garlic, lime juice, chipotle seasoning, salt, and black pepper. Set aside.
05 - Once dough has risen, remove from bowl and stretch on a floured surface to desired pizza shape and thickness.
06 - Preheat oven to 220°C. Transfer stretched dough to a baking tray or pizza stone. Spread a layer of BBQ sauce over the base, followed by shredded mozzarella, chipotle chicken, crumbled bacon, chopped red onion, halved cherry tomatoes, and chopped herbs.
07 - Bake for 12–15 minutes until cheese is melted, edges are golden, and base cooked through.
08 - Remove pizza from oven, drizzle chipotle sauce over the top, slice, and serve immediately.

01 - Allowing dough to rise in a warm place ensures a light, airy crust.
02 - For even melting and browning, use freshly shredded mozzarella rather than pre-grated varieties.
