Chicken Quesadilla Recipe (Print Version)

# Ingredients:

01 - 2 teaspoons chili powder.
02 - 3/4 teaspoon kosher salt.
03 - 1/2 teaspoon garlic powder.
04 - 2 cups cooked diced chicken.
05 - 1 tablespoon extra-virgin olive oil.
06 - 1/2 yellow onion, diced.
07 - 2 bell peppers, diced (any color).
08 - 1 1/4 cups shredded pepper Jack cheese.
09 - 3/4 cup shredded sharp cheddar cheese.
10 - 4 medium whole wheat tortillas.
11 - Oil, butter or cooking spray for cooking.

# Instructions:

01 - Mix chili powder, salt, and garlic powder. Season chicken with half the spice mix.
02 - Sauté onion and peppers with remaining spices until tender, 6-8 minutes.
03 - Mix sautéed vegetables with seasoned chicken.
04 - Layer cheese, chicken-vegetable mixture, and more cheese on half of each tortilla. Fold over.
05 - Cook in skillet for 4 minutes per side until golden and crispy.
06 - Let cool slightly, cut into wedges. Serve with optional toppings.
