Heat oven to 375°F. Grease a muffin tin with cooking spray or melted butter.

Combine potatoes, eggs, both cheeses, onions, garlic powder, salt and pepper. Add milk until scoopable.

Scoop mixture into muffin tin cups, filling 3/4 full. Smooth tops.

Bake 20-25 minutes until golden and crispy on edges.

Cool slightly before removing from tin. Serve warm with optional sour cream.
