Potato Cheese Puffs (Print Version)

# Ingredients:

01 - 2 cups mashed potatoes.
02 - 2 large eggs, beaten.
03 - 1/2 cup shredded cheddar.
04 - 1/4 cup grated Parmesan.
05 - 1/4 cup chopped green onions.
06 - 1/4 cup milk.
07 - 1/4 tsp garlic powder.
08 - Salt and pepper to taste.
09 - Cooking spray or butter for tin.

# Instructions:

01 - Heat oven to 375°F. Grease a muffin tin with cooking spray or melted butter.
02 - Combine potatoes, eggs, both cheeses, onions, garlic powder, salt and pepper. Add milk until scoopable.
03 - Scoop mixture into muffin tin cups, filling 3/4 full. Smooth tops.
04 - Bake 20-25 minutes until golden and crispy on edges.
05 - Cool slightly before removing from tin. Serve warm with optional sour cream.

# Notes:

01 - Works with leftover or fresh mashed potatoes.
02 - Can add bacon or vegetables as mix-ins.
03 - Can make as patties if no muffin tin.
