Pasta with Leeks & Mushrooms (Print Version)

# Ingredients:

01 - 2 tbsp olive oil.
02 - 3 tbsp butter.
03 - 3 medium leeks, sliced.
04 - 1/2 tsp salt.
05 - 1/2 tsp sugar.
06 - 1/3 cup sherry wine.
07 - 8 oz oyster mushrooms.
08 - 4 garlic cloves.
09 - 2 sage leaves.
10 - 3/4 cup heavy cream.
11 - 1 tbsp balsamic vinegar.
12 - 1 tsp lemon zest.
13 - 1 lb fettuccine.
14 - 1 cup pasta water.
15 - 1/2 cup gruyere.
16 - 1 tsp black pepper.
17 - 1/4 cup pine nuts.

# Instructions:

01 - Cook leeks with salt and sugar in oil and butter until golden, about 20 minutes.
02 - Brown mushrooms in butter, add garlic and sage. Return leeks to pan.
03 - Add cream, vinegar, zest. Simmer until thickened.
04 - Toss with cooked pasta, water, cheese and pepper. Top with pine nuts.

# Notes:

01 - Can use different mushrooms.
02 - Sauce can be made ahead.
03 - Serve immediately.
