Cabbage and Ham Salad (Print Version)

# Ingredients:

→ Salad Ingredients

01 - 1 small head of cabbage (approximately 1 lb.)
02 - 4 small cucumbers
03 - 1 can (14 oz.) sweet corn (liquid discarded)
04 - 8 oz. ham
05 - ⅓ cup chopped scallion

→ Dressing

06 - ¾ cup mayonnaise
07 - 1 tbsp. lemon juice
08 - ½ tsp. salt
09 - ¼ tsp. pepper

# Instructions:

01 - Slice the cabbage into thin strips, just like you would for coleslaw.
02 - Cut the cucumbers and ham into small cubes. Drain the liquid from the canned corn.
03 - Place all of the ingredients into a large bowl. Add the mayonnaise, lemon juice, salt, and pepper. Mix well until everything is evenly coated. Serve immediately.

# Notes:

01 - You can add diced bell pepper, peas, diced radishes, or tomatoes to this salad.
02 - White cabbage can be substituted with purple cabbage or Napa cabbage.
03 - Bacon, diced salami, or diced bologna are great substitutions for ham.
04 - Fresh herbs like dill and parsley are excellent additions to this salad.
05 - For best results, dress the salad right before serving. Pre-cut ingredients can be stored separately for up to 2 days.
