Preheat oven to 190°C.

Using your hands or a rolling pin, stretch and shape the pizza dough to desired thickness. Transfer dough to a large baking sheet. Drizzle with 2 tablespoons olive oil and set aside.

Heat 1 tablespoon olive oil in a small skillet over medium heat. Add sliced red onion and cook until translucent. Remove from heat and spread over prepared dough.

Sprinkle shredded mozzarella evenly over the dough and onions. Tear burrata into pieces and scatter across the surface.

Place pizza in the oven and bake for 15 minutes or until the crust is lightly golden.

Remove pizza from the oven. Distribute arugula and pistachios evenly over the top.

Return pizza to the oven and bake for an additional 5–8 minutes, until arugula is wilted and pistachios are lightly toasted.

Remove from the oven, slice, and serve warm.
