BLT Chicken Salad (Print Version)

# Ingredients:

→ Main Ingredients

01 - 4 cups rotisserie chicken, shredded
02 - 8 strips bacon, chopped (center cut)
03 - 2/3 pint grape tomatoes, halved or quartered
04 - 1 avocado, diced
05 - 1/3 cup green onions, diced

→ Dressing

06 - 1/2 cup plain Greek yogurt
07 - 1/3 cup mayonnaise
08 - 1 tablespoon ranch seasoning
09 - 1/2 tsp freshly cracked pepper

# Instructions:

01 - In a large mixing bowl, add the mayo and Greek yogurt then whisk in the ranch seasoning and pepper.
02 - Add the shredded chicken, chopped bacon, and green onions into the bowl. Mix well until it's all combined.
03 - Add in the diced tomatoes and mix again to incorporate. Taste and adjust the seasonings if needed.
04 - Add in the diced avocado once you are ready to serve and gently toss into the desired portion of chicken salad (or leave them in a single layer on top).
05 - Place into an airtight container and store in the fridge for at least 1 hour before serving.

01 - Perfect for meal prep lunches
02 - Can be served with crackers, as lettuce wraps, or with cucumber rounds
03 - Add avocado just before serving to prevent browning
