BBQ Grilled Prawns Garlic (Print Version)

# Ingredients:

→ Main Ingredients

01 - 8 large prawns, shells on and vein removed
02 - 2 cloves garlic, grated
03 - 1–2 chillies, finely sliced
04 - 1 tablespoon fresh parsley, chopped (2g)
05 - 1 lemon, juice and zest
06 - 1/3 cup olive oil
07 - Salt and pepper, to taste

08 - Fresh lemon wedges for serving
09 - Fresh crusty bread for dipping

→ For the Barbecue

10 - Firelighters
11 - Charcoal
12 - Matches or lighter
13 - Glass of water for dousing flames

# Instructions:

01 - Place a few firelighters on the bottom grill of the BBQ. Once lit, pile charcoal on top, forming a concentrated heat source in the center.
02 - Heat olive oil in a pan over medium heat. Add grated garlic and sliced chillies. Cook for 2 minutes. Stir in lemon zest and juice, and cook gently until the garlic is no longer raw. Avoid overcooking.
03 - Pour half of the olive oil and garlic mixture over the prawns. Massage the marinade under the shells to evenly coat the prawns.
04 - Ensure the coals are white hot with no black areas remaining. Place a clean grill rack over the coals.
05 - Place prawns on the hot grill. Cook until pink and slightly charred on each side, approximately 45 seconds to 1 minute per side. Use water to calm any excessive flames. Shells should turn pinky-orange, and meat should be pearl white.
06 - Transfer cooked prawns onto a clean tray. Pour over the remaining garlic, lemon, and chilli sauce. Serve immediately with optional lemon wedges and fresh crusty bread.
