Place a few firelighters on the bottom grill of the BBQ. Once lit, pile charcoal on top, forming a concentrated heat source in the center.

Heat olive oil in a pan over medium heat. Add grated garlic and sliced chillies. Cook for 2 minutes. Stir in lemon zest and juice, and cook gently until the garlic is no longer raw. Avoid overcooking.

Pour half of the olive oil and garlic mixture over the prawns. Massage the marinade under the shells to evenly coat the prawns.

Ensure the coals are white hot with no black areas remaining. Place a clean grill rack over the coals.

Place prawns on the hot grill. Cook until pink and slightly charred on each side, approximately 45 seconds to 1 minute per side. Use water to calm any excessive flames. Shells should turn pinky-orange, and meat should be pearl white.

Transfer cooked prawns onto a clean tray. Pour over the remaining garlic, lemon, and chilli sauce. Serve immediately with optional lemon wedges and fresh crusty bread.
