Preheat oven to 175°C (350°F). Line a baking sheet with parchment paper.

In a mixing bowl, combine the mashed banana, granulated sugar, and melted butter. Mix until the mixture is smooth and well incorporated.

Add plain flour, baking soda, and fine salt to the bowl. Stir gently until just combined, taking care not to overmix.

Drop spoonfuls of dough onto the prepared baking sheet, spacing each portion evenly.

Bake in the centre of the oven for 8-10 minutes, or until the edges are golden.
