Baked Yogurt Berries (Print Version)

01 - 2 cups Greek yogurt
02 - 4 large eggs
03 - 1/4 cup maple syrup or honey
04 - 1 teaspoon vanilla extract
05 - 3 tablespoons cornstarch
06 - 1 1/2 cups berries, divided

# Instructions:

01 - Preheat oven to 350 degrees F and line 8x8 square baking dish with parchment paper. Set aside.
02 - In a large bowl, add yogurt, eggs, maple syrup and vanilla. Whisk until smooth. Add cornstarch and whisk again until well combined.
03 - Add 1 cup of berries and give a few gentle stirs. Then pour mixture into previously prepared baking dish and sprinkle remaining 1/2 cup berries on top.
04 - Bake for 45 minutes or until yogurt in the center is set and not jiggly anymore. Remove from the oven and let cool almost completely.
05 - Cut into 9 slices and enjoy as is or with more maple syrup.

# Notes:

01 - Store: Refrigerate in an airtight container for up to 5 days.
02 - Freeze: Freeze in an airtight container for up to 3 months. Thaw on a counter for a few hours or in the fridge overnight.
