# Ingredients:

01 - 2 large russet potatoes, thinly sliced (about 1/8-inch thick)
02 - 1 tablespoon olive oil
03 - 1/2 teaspoon sea salt
04 - 1/4 teaspoon ground black pepper
05 - 1/4 teaspoon paprika or garlic powder (optional, for added flavor)

# Instructions:

01 - Set oven to 220°C. Line a baking sheet with parchment paper for easy clean-up.
02 - Wash and dry potatoes thoroughly. Using a mandoline slicer, cut potatoes into even 3 mm slices for consistent texture.
03 - Place sliced potatoes in a large bowl. Drizzle with olive oil, then sprinkle with sea salt and black pepper. Add paprika or garlic powder if desired. Toss until all slices are evenly coated.
04 - Lay the seasoned potato slices in a single layer on the prepared baking sheet, ensuring no overlap so that chips crisp evenly.
05 - Transfer the baking sheet to the oven and bake for 15 to 20 minutes, flipping the chips at the halfway point to achieve uniform golden color and crispness.
06 - Remove the chips from the oven and leave them on the baking sheet for 5 minutes to cool and allow maximum crisping.
