# Ingredients:

01 - 600 grams cod fillets
02 - Salt, to taste
03 - Black pepper, to taste

04 - 2 tablespoons olive oil
05 - 1 medium onion, thinly sliced
06 - 1 tablespoon grated fresh ginger
07 - 2 garlic cloves, crushed
08 - 300 milliliters coconut milk
09 - Zest and juice of 1 large organic lemon

# Instructions:

01 - Preheat your oven to 180°C (350°F) to prepare for baking.
02 - Season the 600 grams cod fillets with salt and black pepper evenly.
03 - In a large skillet, heat 2 tablespoons olive oil over medium heat. Add the thinly sliced onion and sauté until translucent. Stir in 1 tablespoon grated fresh ginger and 2 crushed garlic cloves, cooking for an additional minute. Pour in 300 milliliters coconut milk and bring it to a gentle simmer. Add the zest and juice of 1 large organic lemon, stirring well.
04 - Place the seasoned cod fillets in a baking dish in a single layer. Pour the prepared coconut-lemon cream sauce over the cod, ensuring it is well covered. Bake in the preheated oven for 20-25 minutes, or until the cod flakes easily with a fork.
05 - Remove the baked cod from the oven and serve with the sauce drizzled over the top. Pair with rice or vegetables for a complete meal.
