Authentic Kashmiri Pink Chai (Print Version)

# Ingredients:

→ For the Chai

01 - 4 cups water
02 - 2 tablespoons green tea (Kashmiri green tea if available)
03 - 1/4 teaspoon baking soda
04 - 2 cardamom pods, crushed
05 - 1 cup whole milk (or your dairy-free alternative)
06 - 2 tablespoons sugar (or to taste)

→ For Garnish

07 - Pistachios, chopped

# Instructions:

01 - In a saucepan, bring 4 cups of water to a boil.
02 - Add the green tea and baking soda to the boiling water. (The baking soda is the secret ingredient that helps create that gorgeous pink color!)
03 - Reduce the heat and simmer for about 10-15 minutes. Don't worry; the water will reduce and turn a lovely deep red-brown color.
04 - Once done, add the crushed cardamom pods.
05 - Now, using a whisk or a ladle, whisk the tea vigorously for a few minutes—this step is quite fun, and it helps aerate the tea! You can whisk it until the tea turns lighter in color, which usually takes about 5 minutes.
06 - Next, slowly add the milk, stirring gently until combined. Bring it back to a gentle boil and add sugar according to taste.
07 - Pour yourself a cup, and don't forget to garnish with chopped pistachios! Enjoy every sip!

# Notes:

01 - For a richer flavor, you may toast your green tea lightly before adding it to the water. It enhances the aroma and taste!
02 - Storing leftover chai? Keep it in the fridge for 2-3 days, and just reheat gently on the stove when you're ready to enjoy.
03 - Want to impress? Serve your chai in traditional Kashmiri cups for an authentic experience!
