Almond Joy Coconut Bites (Print Version)

# Ingredients:

→ Coconut Mixture

01 - 200 grams sweetened shredded coconut
02 - 160 grams sweetened condensed milk
03 - 2.5 milliliters vanilla extract

→ Assembly

04 - 12 to 15 whole almonds

→ Chocolate Coating

05 - 260 grams semi-sweet or milk chocolate chips
06 - 15 milliliters coconut oil (optional, for smoother coating)

# Instructions:

01 - In a mixing bowl, thoroughly blend sweetened shredded coconut, sweetened condensed milk, and vanilla extract until the mixture is cohesive and sticky.
02 - Portion about 1 tablespoon of the mixture and form into balls or ovals. Press one whole almond into the top of each, reshaping as needed. Place on a parchment-lined tray and freeze for 20–30 minutes to solidify.
03 - Melt chocolate chips with coconut oil (if using) in a microwave-safe bowl in 20-second intervals, stirring between each, until smooth. Alternatively, use a double boiler for melting.
04 - Dip each chilled coconut bite into the melted chocolate using a fork, ensuring complete coverage. Allow excess to drip off, then return to the lined tray.
05 - Refrigerate the coated bites for 15–20 minutes, or until chocolate is fully set. Store in an airtight container in the refrigerator for up to one week.

# Notes:

01 - For a decorative finish, drizzle additional melted chocolate over each bite once the primary coating is set.
02 - For a nut-free alternative, omit the almonds before shaping.
03 - The bites can be frozen for up to 3 months and thawed in the refrigerator before serving.
