Almond Cake Baking Method (Print Version)

# Ingredients:

01 - ¼ cup sliced raw almonds, plus more for serving
02 - 2 cups fine blanched almond flour
03 - 2 teaspoons baking powder
04 - ¼ teaspoon salt
05 - 3 eggs
06 - ½ cup maple syrup
07 - 2 tablespoons olive oil or avocado oil
08 - 1 teaspoon almond extract
09 - ½ teaspoon vanilla extract
10 - Powdered sugar, for serving, optional

# Instructions:

01 - Preheat your oven to 350°F. Grease an 8” springform or 8” round cake pan with cooking spray.
02 - Spread sliced almonds on a small baking tray. Toast for 4-5 minutes until golden brown. Let them cool.
03 - In a medium bowl, mix almond flour, baking powder, and salt.
04 - In a larger bowl, whisk together eggs, maple syrup, oil, vanilla extract, and almond extract until smooth.
05 - Stir the dry ingredients into the wet mixture until smooth.
06 - Pour batter into the prepared pan. Sprinkle toasted almonds evenly over the top.
07 - Bake for 20-25 minutes until the top is golden and a toothpick inserted comes out clean.
08 - Remove the cake from the oven and let it cool in the pan.
09 - Once cooled, dust with powdered sugar and optionally add more raw almond slices.
